Blend : Syrah, Grenache noir, Carignan.
Vinification : traditional, in thermo-regulated stainless-steel vats.
Long maceration process (4 weeks) with short daily periods of punching down to favour gentle extraction.
Maturation : 12 months in 228 and 300-litre French oak barrels.
Tasting characteristics : lovely deep ruby colour. Very complex to the nose. Aromas of black fruit, spices, pepper and cocoa. Generous, intense and structured on the palate.
Food and wine pairing : to be enjoyed with mushroom risotto, duck breast, moussaka, meat cooked in sauce or with ripened cheese.
Serving temperature : 16 °C / 18°C.
Optimum maturity : 10/12 years.
